Chicory roots contain high levels of inulin, which is a polysaccharide that has been used as a sweetener as well as a probiotic (which promotes the growth of beneficial bacteria in the intestine). Nowadays, inulin is also promoted as dietary fiber.
While fresh chicory roots contain around 20 to 25% of inulin by total weight, dried chicory root extract contains 98% of inulin. So chicory root extract is now widely used as a dietary supplement and as an additive. In order to prepare chicory root extract, fresh roots are dried, ground and mixed with water.
